Hawthorn Chutney

4.5 lbs. hawthorn berries
1 qt. apple cider vinegar
22 oz. organic brown sugar
2 tbsp. ground ginger
1 tbsp. ground nutmeg
½ tbsp. ground cloves
½ tbsp. ground allspice
2 tbsp. sea or mineral salt
½ tsp black pepper
A few sprigs of fresh thyme
